I really fancied mussels... So did he!

Always finishing Sunday Evening with an food coma, is the best way to end the weekend. 

With fresh seafood at our Local Sainsbury's we managed to pick some really fresh mussels. At first it never always clear to me how I would cook seafood though with fresh ingredients to choose from, you're never short of ideas. 

Belgium cuisine infused that with Italian. 

Mussels with Smoked Bacon, complimented with a white wine creamy sauce. For this dish, I tend to use the best bacon that I could find. With thoroughly cooked through Garlic. Onions are optional, do use if you have. White wine and cream is a must for this. I've used a Pinot Grigio and Single cream for mine. No added salt of pepper. 

My second dish is an Linguine with Mussels (if I could get hold of clams I would definitely use it for this dish). I prefer Linguine without tomato sauce - usually I feel that the sauce drowns out the taste of the pasta itself and the herbs. Instead, I've used lots of garlic, chillies, drizzled in Extra Virgin Olive Oil. Half a tea spoon and same quantities for black pepper. Just as it is, as simple as looks with a powerful taste.
